SUMMER FEASTS

Embrace the abundance of summer with grilled vegetable kebabs, refreshing watermelon feta salad, and berry-packed smoothie bowls. Our summer recipes are designed to keep you cool and energised during the hottest months.


Ingredients

  • 4 cups watermelon, cubed 

  • 1 cup feta cheese, crumbled 

  • 1/4 cup fresh mint leaves, chopped 

  • 1/4 cup red onion, thinly sliced 

  • 2 tablespoons extra-virgin olive oil 

  • 1 tablespoon balsamic glaze (optional)

Method

1. Prepare Ingredients: - In a large bowl, combine the watermelon cubes, crumbled feta cheese, chopped mint, and sliced red onion. 

 2. Dress the Salad: - Drizzle the olive oil over the salad and gently toss to combine. - Season with salt and pepper to taste. 

 3. Serve: - Transfer the salad to a serving platter and drizzle with balsamic glaze, if using. - Serve immediately. 


Ingredients

  • 1/2 kilo of large prawns, peeled and deveined

  • 3 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon lemon juice

  • 1 teaspoon smoked paprika

  • Salt and pepper, to taste - Lemon wedges, for serving

Method

1. Marinate the prawns: - In a bowl, combine olive oil, minced garlic, lemon juice, smoked paprika, salt, and pepper. - Add the prawns and toss to coat. Marinate for 15-30 minutes.

2. Prepare the Skewers: - Thread the large prawns onto skewers.

3. Grill: - Preheat the grill to medium-high heat. - Grill the prawn skewers for 2-3 minutes per side, until prawns are opaque and cooked through.

4. Serve: - Serve the yummy fish skewers with lemon wedges.


Ingredients

  • 1 cup fresh strawberries, hulled and sliced

  • 1 cup fresh blueberries - 1 cup fresh raspberries 2 cups Greek yogurt

  • 1/4 cup granola

  • 2 tablespoons honey

Method

1. Layer the Parfait: - In four serving glasses, layer Greek yogurt, strawberries, blueberries, raspberries, and granola.

2. Drizzle with Honey: - Drizzle honey over the top of each parfait.
